Kids these days have got it so good. When I was little, an acceptable cauliflower recipe was defined as either A) frozen cauliflower steamed to a light mush garnished with a dash of salt or B) baked cauliflower, slightly less mushy, topped with runny cheese. Where, oh where, was cauliflower steak when my 12 year old self needed it?
Cauliflower, Our Vegetable Hero!
Thankfully cauliflower has come a long way! Today, we’re celebrating this fine vegetable by turning it into everything from cauliflower rice to cauliflower waffles and we’re not looking back. Why are we so obsessed with cauliflower right now? Well, because it makes such a great stand-in for meat-forward dishes. This is good for many of us, because while we enjoy meat, we also need to find more ways to work more vegetables into our lives. Cauliflower works in these dishes because it’s hearty (thanks to it’s cruciferous nature) and it’s relatively neutral flavor. That neutral flavor increases it’s versatility too. Making it the perfect food for almost any ethnic cuisine! Sounds pretty perfect, right? We think so too! That’s why we gathered some of our favorite nutrition-focused cauliflower-loving recipes for you to enjoy!
Smoky Za’atar Cauliflower Steaks
This recipe is very easy and quick to make and it’s full of flavour. Perfect for a weekday night dinner when you’re in a rush.
- 1 small cauliflower cut in “steaks” (cut thick slices, about ½ inch thick at least)
- 2 tbsp Za’atar (you can find this spice blend in the global spices aisle at the market or in a middle eastern shop)
- 1 tsp smoked paprika
- 1 tsp chipotle pepper powder
- Salt and pepper to season
- Olive oil to fry
- Chopped sage
- Splash of apple cider vinegar
- Olive oil
- Salt and pepper to taste
- Mix the za’atar, paprika, and chipotle pepper
- Drizzle cauliflower steak with olive oil and rub the za’atar mix, season with salt and pepper
- Grab a large pan and add a bit of oil, put over medium-high heat and sear the cauliflower slices on each side. Sear for about 2-3 minutes until golden brown. If you want you can lower the heat and cook for an additional 3-5 minutes to make it softer but we like ours crunchy in the middle
- Mix the topping ingredients, add to the cooked steaks and serve
