A blend of vegetables and coconut milk, served over brown jasmine rice, and black lentils give it a rich, indulgent flavor while providing plenty of nutrition. Read on to find out exactly how its whole ingredients will help power your day.

Brown Jasmine Rice

Brown rice is a whole grain rice, and a great source of dietary fiber. A single bowl of the Great Karma Coconut Curry contains 9g of fiber, providing you with 32% of your daily recommended fiber intake. Brown jasmine rice also has a much lower glycemic index compared to regular white rice. Several studies show a link between eating low glycemic index foods and a reduced risk of Type 2 diabetes.

Whole Vegetables

The Great Karma Coconut Curry contains two full servings of vegetables including kale, red bell peppers, carrots, and cauliflower. Together, these vegetables provide antioxidants, fiber, calcium, iron, potassium, and a host of vitamins. Their various health benefits include reduced cholesterol levels, improved eye health, controlled blood pressure levels, and better cardiovascular health. This vegan curry also includes butternut squash. Did you know that this sweet and nutty-flavored squash is technically a fruit? It’s rich in Vitamin A, which is great for your hair and skin. Vitamin A helps in the production of sebum, which is a natural moisturizer. Butternut squash also contains an antioxidant called beta-carotene. This delicious coconut curry contains black lentils, making it rich in plant-based proteins. Research suggests that greater consumption of plant-based proteins can help with managing your weight. Coconut

The Great Karma Coconut Curry gets its delicious flavor from natural ingredients. There is only 1g of total added sugar in this meal, with the majority of the sweetness coming from the natural sugar present in coconut milk. We use only sea salt in the seasoning, ensuring that the total sodium in the bowl is exactly 390mg. The spicy flavor can be credited to the presence of black mustard seeds, cumin, fenugreek leaves, and curry powder.
